La biodisponibilit\u00e9 du zinc\u00a0<\/span><span style=\"color: #000000;\">varie selon les situations physiologiques. Ainsi, avec l\u2019\u00e2ge, la\u00a0<\/span><span style=\"color: #000000;\">capacit\u00e9 d\u2019absorption diminue alors qu\u2019elle augmente au cours\u00a0<\/span><span style=\"color: #000000;\">du dernier trimestre de la grossesse et en cas d\u2019allaitement. La\u00a0<\/span><span style=\"color: #000000;\">biodisponibilit\u00e9 du zinc, dans le cadre d\u2019une alimentation\u00a0<\/span><span style=\"color: #000000;\">vari\u00e9e, est estim\u00e9e \u00e0 20-30 %, mais elle peut s\u2019\u00e9lever \u00e0 50-55 %\u00a0<\/span><span style=\"color: #000000;\">dans une alimentation \u00e0 base de produits d\u2019origine animale, et\u00a0<\/span><span style=\"color: #000000;\">jusqu\u2019\u00e0 60 % lorsque le zinc est ing\u00e9r\u00e9 seul. Les apports\u00a0<\/span><span style=\"color: #000000;\">nutritionnels conseill\u00e9s (ANC) prennent en compte cet effet\u00a0<\/span><span style=\"color: #000000;\">du r\u00e9gime, et proposent deux types d\u2019apports recommand\u00e9s\u00a0<\/span><span style=\"color: #000000;\">selon que l\u2019absorption intestinale est basse (14 mg\/j pour\u00a0<\/span><span style=\"color: #000000;\">l\u2019homme adulte et 12 mg\/j pour la femme) ou haute (9 mg\/j\u00a0<\/span><span style=\"color: #000000;\">pour l\u2019homme et 7 mg\/j pour la femme). Chez la femme\u00a0<\/span><span style=\"color: #000000;\">enceinte, ils sont estim\u00e9s \u00e0 15 mg\/j et sont accrus par la\u00a0<\/span><span style=\"color: #000000;\">lactation (16 \u00e0 19 mg\/j), Chez le nouveau-n\u00e9 \u00e0 terme, ils sont\u00a0<\/span><span style=\"color: #000000;\">de 100 \u03bcg\/kg\/j.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Des apports insuffisants et une biodisponibilit\u00e9 diminu\u00e9e en\u00a0<\/span><span style=\"color: #000000;\">relation avec des apports riches en phytates (dans les c\u00e9r\u00e9ales\u00a0<\/span><span style=\"color: #000000;\">non raffin\u00e9es) sont la cause la plus fr\u00e9quente de d\u00e9ficits\u00a0<\/span><span style=\"color: #000000;\">biologiques en zinc mais ceux-ci peuvent aussi \u00eatre associ\u00e9s \u00e0\u00a0<\/span><span style=\"color: #000000;\">une pathologie comme l\u2019alcoolisme, l\u2019insuffisance h\u00e9patique ou\u00a0<\/span><span style=\"color: #000000;\">r\u00e9nale, la malabsorption ou l\u2019ost\u00e9oporose. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Certains facteurs\u00a0<\/span><span style=\"color: #000000;\">environnementaux augmentent les besoins en zinc. La consommation\u00a0<\/span><span style=\"color: #000000;\">de tabac, d\u2019alcool, les polym\u00e9dications ou la survenue\u00a0<\/span><span style=\"color: #000000;\">de maladies comme le diab\u00e8te qui, en augmentant la fuite\u00a0<\/span><span style=\"color: #000000;\">urinaire de cet \u00e9l\u00e9ment, diminuent le statut en zinc devraient\u00a0<\/span><span style=\"color: #000000;\">s\u2019accompagner d\u2019une augmentation des apports en zinc. Des\u00a0<\/span><span style=\"color: #000000;\">efforts physiques importants peuvent \u00e9galement conduire \u00e0 une\u00a0<\/span><span style=\"color: #000000;\">forte \u00e9limination du zinc par la sueur (13,7 mg\/j versus 0,8 mg\/j\u00a0<\/span><span style=\"color: #000000;\">chez les s\u00e9dentaires) et par l\u2019augmentation de l\u2019excr\u00e9tion\u00a0<\/span><span style=\"color: #000000;\">urinaire. Cette perte est prise en consid\u00e9ration avec une\u00a0<\/span><span style=\"color: #000000;\">augmentation des ANC chez les sportifs. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Enfin les monosuppl\u00e9mentations\u00a0<\/span><span style=\"color: #000000;\">en calcium ou en fer sous forme de suppl\u00e9ments\u00a0<\/span><span style=\"color: #000000;\">ou d\u2019aliments fortifi\u00e9s, en r\u00e9duisant l\u2019absorption du zinc,\u00a0<\/span><span style=\"color: #000000;\">exposent \u00e0 un risque de carence et devraient s\u2019accompagner\u00a0<\/span><span style=\"color: #000000;\">d\u2019une augmentation des apports zinciques. Une suppl\u00e9mentation\u00a0<\/span><span style=\"color: #000000;\">de 600 mg en calcium peut diminuer de 50 %\u00a0<\/span><span style=\"color: #000000;\">l\u2019absorption du zinc. En outre, le rapport fer\/zinc ne devrait\u00a0<\/span><span style=\"color: #000000;\">pas \u00eatre sup\u00e9rieur \u00e0 2, pour \u00e9viter les effets n\u00e9gatifs du fer sur\u00a0<\/span><span style=\"color: #000000;\">l\u2019absorption du zinc, un risque qui ne doit pas \u00eatre sous-estim\u00e9\u00a0<\/span><span style=\"color: #000000;\">chez les jeunes enfants nourris avec des aliments enrichis\u00a0<\/span><span style=\"color: #000000;\">en fer.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Malgr\u00e9 des apports sous-optimaux,\u00a0<\/span><span style=\"color: #000000;\">les m\u00e9canismes d\u2019adaptation de l\u2019hom\u00e9ostasie du zinc pourraient\u00a0<\/span><span style=\"color: #000000;\">expliquer la raret\u00e9 des d\u00e9ficits biologiques dans la\u00a0<\/span><span style=\"color: #000000;\">population adulte g\u00e9n\u00e9rale.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Les sujets \u00e2g\u00e9s en raison d\u2019une insuffisance d\u2019apport associ\u00e9e\u00a0<\/span><span style=\"color: #000000;\">\u00e0 des troubles de l\u2019absorption dus au vieillissement des cellules\u00a0<\/span><span style=\"color: #000000;\">de la muqueuse intestinale, sont particuli\u00e8rement expos\u00e9s \u00e0 un\u00a0<\/span><span style=\"color: #000000;\">risque de d\u00e9ficit. Une diminution du statut biologique en zinc\u00a0<\/span><span style=\"color: #000000;\">avec l\u2019\u00e2ge est g\u00e9n\u00e9ralement admise.<\/span><\/p>\n<p style=\"text-align: justify;\">\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Sachant qu\u2019il n\u2019est pas recommand\u00e9 de consommer souvent de la viande rouge, il peut \u00eatre envisag\u00e9 de prendre des suppl\u00e9ments en zinc.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">La quantit\u00e9 recommand\u00e9e de zinc est de 14 mg par jour pour un homme.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\" data-mce-mark=\"1\">Le zinc est un min\u00e9ral essentiel \u00e0 la sant\u00e9 humaine, mais en exc\u00e8s sur le long terme il devient toxique. Une seule esp\u00e8ce de martinet produit un nid blanc translucide qui est comestible.
